Winter Brussel Sprouts:

Ingredients

For one baking dish:

- brussel sprouts (as many as will fit stem-side down in a baking dish)
- bread crumbs
- garlic
- butter
- salt

Cooking Instructions

After washing the brussel sprouts, make score the bottoms of each one cross-wise. This will ensure that they will cook evenly.

Pre-boil the brussel sprouts for 5 minutes in well salted water. Cooking them too long will make them bitter and cause their color to fade.

Remove them from the water, quickly strain, and then place them stem-side down in a baking dish that contains a layer of butter. As they continue to cook, they will absorb the butter.

Cover with baking paper and cook for 15 minutes at 350°F.

Roast some bread crumbs with finely chopped garlic in a pan to add as a topping 5 minutes before taking them out of the oven.

Options: top with sautéed bacon shortly before taking out of the oven. Or, top with roasted chestnuts or simply mornay sauce. After removing the sprouts from water, you can submerge them in ice water to make them a vibrant green color.
