Chimichurri Steak and Fish Sauce:

For each portion:

- 1/4 cup finely chopped parsley
- 1/2 tablespoon minced garlic
- 1/4 teaspoon finely chopped fresh thyme
- a pinch of dried oregano
- 1/4 cup squeezed lime juice with some grated lime zest
- 1/4 cup olive oil
- 1/4 tablespoon ground cubeb (or ground black pepper corns)

Cooking Instructions

In a bowl for mixing, combine all of the ingredients. Season to taste with some salt.

Options: add a finely chopped red chili or substitute white wine vinegar for the lime juice.
