Special equipment: hand blender.
- 1/4 finely chopped small yellow onion
- 2 teaspoons finely chopped small green pepper
- olive oil
- one finely minced toe of garlic
- dried thyme
- dried oregano
- fresh basil leaves
- 1 can whole tomatoes (or fresh skinned tomatoes)
- 1 can tomato puree
- salt & pepper to taste
A large can of peeled tomatoes in heavy puree will also work well.
Blend all of these ingredients together, cold, with a hand mixer, then warm them for about 15 minutes without letting the mixture boil.
Add salt and pepper to taste.
You can make this sauce in large batches and freeze the rest for awhile. Using too much green pepper will overwhelm the smell and flavor of the sauce.
